Tuna Fondue

The chilly weather is back and creating a need for warm, comforting food.  This meal holds a bit of nostalgia.  When I was a little girl, my mother made me grilled cheese sandwiches with tuna salad in the middle, calling it “tuna fondue.”  Perhaps it was simply the name, but I loved it then and still do.  So, here is the tuna melt, Texas style.

1 recipe tuna salad (basic is better- don’t skimp on the mayo!)
sliced cheddar cheese
your favorite sandwich bread
butter (optional)

Begin by buttering up the outsides of the bread, if you so desire.  Then, layer up your sandwich with cheese, tuna salad, then cheese. Grill on both sides until cheese is melted and bread is browned to perfection.  Delicious served with thick, crunchy potato chips and a cold beer!

Hayden, who turned two in October, has a lot of toys and, for the most part, likes all of them.  There are a bunch that really stand out, though, and here is a list of some of those he enjoys the most:

Hayden got this at 8 or 9 months old and has played with it every day since- and we have only replaced the batteries once!

Lego Duplo Sets

We bought these for Hayden when he was 18 months old.  At that time he didn’t really know what to do with them, but now he is building all kinds of things and loving it!  He especially loves the little people and accessories like the Duplo Garbage Truck and Fire Chief.

Books, Books, and More Books…

Hayden LOVES books.  We read together.  He “reads” by himself.  He quotes his books as he puts himself to sleep.  These are just a few of his favorites this week:

Melissa and Doug Play Food

Hayden got this for Christmas and loves it.  He loves to “cook” anything, really- cheerios, puzzle pieces, LEGO pieces…

California Highway Patrol Retro Diecast Model

Purchased from the CHP office (Why were we there? Long story…) but also available through Amazon.  Hayden LOVES this car, from the doors that actually open to the visible “engine” under the hood.

Sassy Bath Time Letters

Super fun at bath time!  Hayden likes to name the letters as we toss them into the bath, one by one.  Once we have enough to work with, we spell out words.

Other Top Toys & Activities:

  • Playmobil 1-2-3  toys, especially vehicles that come with a little driver
  • Fisher Price Rescue Helicopter- super cute, small orange helicopter comes with 2 little men that Hayden loves
  • A silver-plated piggy bank on wheels- he loves to shake it and hear the money inside and also wheels it around like a car
  • Original Star Wars Action Figures (these were Scott’s when he was a boy- the real deal!)
  • Brooms and buckets of water (outside, of course!)
  • Dirt Devil Jr. Vacuum- This is the real deal, an upright just like mom’s.  We don’t have this at home but sure wish we did.

Hungry for Spring Omelette

Although we still have two more months of winter, today’s blue Los Angeles sky reminds me of spring.

1/3 cup finely chopped carrot
1 leek (tender white only, finely chopped)
1/4 cup frozen peas, thawed
3 eggs
pinch dried tarragon (or herbs de Provence)
pinch salt
olive oil

In an omelette pan, heat 2-3 tbs olive oil on low-medium heat.  Cook carrots and leeks until tender, about 5 minutes.  Add peas, stirring to heat through.  Whisk together eggs, herbs, and salt.  Pour pour over veggies.  Cook until just setting then turn over.  Serve immediately.

The “Momover”

“No, Mommy!”

This is what I hear from Hayden on the weekends, implying that he wants Daddy.  Just fine by me!  As I type, Scott is putting Hayden down for his nap, so it’s a good opportunity for some Carrie time.

Surprisingly, I am not sore today, despite how tired my legs were after yesterday’s spin.  I am off to yoga- whoo hoo!
